Did you know that today is the Girl Scouts’ 100th birthday?  To celebrate, Why Not Girl! is sharing a recipe that will certainly earn you that baking badge … and the love of everyone who takes a bite!  Break out that cocoa that’s been sitting idle since Christmas cookie season because tonight you’re making Homemade Thin Mints!!

Why Not Girl!: Homemade Thin Mints

Homemade Girl Scout Cookie Thin Mints
The Cookies
2 1/4 cups flour, all-purpose
1/4 cup cornstarch
6 tablespoons cocoa powder, unsweetened
1/2 teaspoon salt
1 cup sugar, white
1/2 cup butter, room temperature
1/3 cup milk, any kind
1/2 tsp vanilla extract
1 tsp peppermint extract

The Chocolate Coating
10 ounces chocolate, dark or semisweet*
1/2 cup butter, room temperature
